MUTO

Produced on a small piece of land in Central Victoria's Tallarook, Muto is truly a family affair from the Smit family themselves to the multi-generational farmers they choose to work with.

COLD-TAKES

What’s a variety/style of beverage that always brings you comfort?

South African Chenin Blanc. For me, it’s the ultimate all-rounder—generous, energetic, and full of complexity. After a day in the garden, it’s the kind of wine that feels truly rewarding, and it pairs with just about anything.

Where are you heading when you want comfort but don’t feel like hosting?

Living in the Dandenong Ranges, it has to be The Fat Goat in Upwey. It’s a cosy micropub with an excellent rotating list of beers and a BYO takeaway setup—so everyone gets to eat what they love, without fuss.

What’s your go-to dish when you want to impress your guests?

I love slow cooking using sous-vide. A 48-hour Mediterranean-inspired lamb shoulder with roast potatoes, seasonal veg, and grain salads always hits the mark—especially when paired with a few conversation-starting wines.

What album are you putting on when you need to set the mood?

My Finest Work Yet by Andrew Bird. Jazz, folk, and soul that melts into the background like a good fire—and a great bottle of wine. We saw him at the Forum (our favourite venue) this year—easily one of the most impressive musicians we’ve seen live.
